Chocolate puddings<\/h2>\n

Mini Baked Cheesecake with Cocoa Biscuit and White Chocolate<\/strong>6 chocolate cookies<\/p>\n

200g soft cheese<\/p>\n

1\/2 tablespoon all-purpose flour<\/p>\n

1 tablespoon white granulated sugar<\/p>\n

1 teaspoon vanilla<\/p>\n

1 medium egg<\/p>\n

12 pieces of white chocolate<\/p>\n

To serve<\/strong><\/p>\n

Marmalade<\/p>\n

Heat oven to 180C.<\/p>\n

For the base of the cheesecakes<\/strong>: Place 6 small silicone moulds in a baking pan and place the 6 cookies inside. Squeeze the cookies lightly to break down a little.<\/p>\n

Place two pieces of white chocolate on top of the cookie.<\/p>\n

For the cheesecake mixture<\/strong>: In another bowl, whisk the soft cheese, flour, sugar, vanilla and egg.<\/p>\n

Divide the mixture into the small tins.<\/p>\n

Place the tins in a deep ovenproof baking pan and add hot water up to 1\/3 (bain-marie).<\/p>\n

Bake for about 20 minutes. Let cool completely.<\/p>\n

Remove from the moulds and serve with jam of your choice.<\/p>\n

Vegetarian Chocolate Cake with Tahini and Berries<\/strong><\/p>\n

For the cake<\/strong><\/p>\n

400g sifted plain flour<\/p>\n

60g sifted cocoa<\/p>\n

1 teaspoon baking soda<\/p>\n

1 teaspoon baking powder<\/p>\n

200g brown sugar<\/p>\n

40g honey<\/p>\n

1 sachet vanilla<\/p>\n

2 pinches salt<\/p>\n

400g vegetable milk (almond, soy, oats)<\/p>\n

100g tahini with cocoa<\/p>\n

2 teaspoons apple cider vinegar<\/p>\n

2 tsp orange or tangerine zest<\/p>\n

For the chocolate cream \/ tahini<\/strong><\/p>\n

200g cooking chocolate<\/p>\n

400ml soy cream<\/p>\n

100g tahini with cocoa<\/p>\n

3 tablespoons honey<\/p>\n

400g forest berries, for garnish \/ filling<\/p>\n

Prepare the pan: <\/strong>Line the base of a 24cm round cake pan with a removable base with parchment paper.<\/p>\n

For the cake: <\/strong>In a mixer mix all the ingredients together.<\/p>\n

Transfer the mixture into the round pan and spread with a spoon.<\/p>\n

Bake in a well-preheated oven at 180C for 25 minutes or until a toothpick inserted into it comes out slightly wet (the cake will continue to bake).<\/p>\n

Remove the cake pan from the oven and leave it for another 10 minutes to cool.<\/p>\n

To finish: <\/strong>When cool, slice the cake into three layers and fill each layer with the chocolate cream and berries. Garnish with chocolate cream and berries.<\/p>\n

For the chocolate cream: <\/strong>Place all the ingredients in a bain-marie and melt them. Refrigerate the cream for 10 minutes or until thick.<\/p>\n
